Carrot Nut Cake

Sometimes I leave the nuts out and bake this into mini muffins for the kids to take to school – they it!
Ingredients:
2 cups flour
2 tsp baking powder
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 cup corn oil
2 cup sugar
4 eggs
3 cups grated raw carrots
1 cup finely chopped walnuts
Directions:
Preheat oven to 325. Prepare 2 9″ round pans. In one bowl mix all dry ingredients; in another bowl add sugar slowly into oil with mixer, beat in eggs one at a time mix until fluffy. Stir in dry ingredients until well mixed then add carrots and nuts. Pour into pans and bake for 60-65 mins. Allow to cool before icing with a cream cheese frosting.
