Chocolate Black Bean Brownies

Ingredients:
- 1 can of black beans (drained and rinsed)
- 1/4 cup unsweetened cocoa powder
- 1/2 cup maple syrup or agave syrup
- 1/4 cup coconut oil (melted) or another plant-based oil
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- Pinch of salt
- 1/4 cup dark chocolate chips (ensure they’re dairy-free if needed)
Instructions:
- Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin or line it with muffin cups.
- In a blender or food processor, blend the black beans until smooth (you should have about 1 1/4 cups of bean puree).
- Add the cocoa powder, maple syrup (or agave), coconut oil, vanilla, baking powder, baking soda and salt to the black bean mixture. Blend again until everything is well combined.
- Stir in the chocolate chips (if using) and pour the batter evenly into the muffin tin, filling each cup about 2/3 full.
- Bake for 15-20 minutes, or until a toothpick comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Optional: You can add in any kind of nut or seed to these to give them a little more love.
