Tom and Chee
This stands for tomato soup and grilled cheese in our house, and it’s a lunchtime staple!
28 oz can crushed tomatoes
1 stalk celery
1/2 large onion
1 garlic clove
2 Tablespoons butter
1 Tablespoon sugar
1 Tablespoon flour
1 teaspoon salt
1/2 teaspoon pepper
4 1/2 cups milk
slices of bread
butter
cheddar cheese
In a food processor, blend first 4 ingredients until smooth. Transfer to a soup pot. Stir in butter, sugar, flour, salt and pepper. Cook on medium-high until it boils (watch out – it splatters!) Lower heat and add milk. Do not boil.
Make grilled cheese sandwiches using bread, butter and cheddar. Cut into soldiers (long strips for dipping) or cubes (to put on soup like croutons) for lunchbox fun!
