Do a Father’s Day Flip
In last month’s article, we switched up tradition and offered some great barbecue recipes to celebrate Mother’s Day. We’re continuing to flip things up by celebrating Dad this month with brunch. But this isn’t a dainty brunch – it’s a manly brunch full of Dads’ favourites, using easy-to-find and inexpensive ingredients.
Cheddar Bacon Muffins
Ingredients: 2 ½ cups flour, ¾ cups sugar, 2 teaspoons baking powder, ½ teaspoon baking soda, ¼ teaspoon salt, ½ teaspoon cayenne, 1 egg, 1 cup buttermilk, ½ cup canola oil, ½ cup crumbled bacon, 1 ½ cups shredded cheddar, ½ cup thinly sliced green onion
Preheat the oven to 375. Whisk together the dry ingredients. In a separate bowl, whisk together the wet ingredients. Combine and mix sparingly. Mix in the bacon, cheese and green onion. Scoop into a muffin pan lined with paper liners. Bake 20 minutes. Let cool 5 minutes in the pan, then transfer to a wire rack to continue cooling.
Omelette Roll-Up (use our suggested ingredients, or swap them out to include Dad’s favourites)
Ingredients: 8 eggs, 1 cup milk, 1/3 cup flour, 1 finely chopped green pepper, 6 thinly sliced mushrooms, ¼ cup finely chopped red pepper, 1 cup shredded mozza-cheddar
Preheat the oven to 350. Line a 15X10X1” pan with parchment paper, with the ends extending over the two long sides. Spray with cooking spray. Beat eggs, milk and flour. Stir in the rest of the ingredients, and pour into the pan. Bake approximately 15 minutes, until set. Remove from oven, and roll up the omelette immediately, starting at one long end and peeling off paper as the omelette is rolled. Place on a platter and cut into slices.
PB and Chocolate Smoothies
Ingredients: 1 cup plain or vanilla yogurt, 1 cup chocolate milk, 1 banana, spoonful of peanut butter, 3 ice cubes
Blend all ingredients together and enjoy!
