Mother’s Day Mix-Up


It has become tradition to celebrate Mother’s Day with brunch, and Father’s Day with a barbecue.  But we’re mixing things up in my house this year, totally flipping tradition on its head.  We’ll be honouring Mom with these delicious barbecue recipes, all made with simple and inexpensive ingredients that you may already have on hand.  (Plus, come back next month to find brunch recipes for Dad!)

 

Warm Cream Cheese Spread

Ingredients: 250 g package light cream cheese, ¼ cup pesto, 1 chopped plum tomato, ¼ cup mozzarella

 

Heat the BBQ to medium.  Place the cream cheese brick on an 8” square of tinfoil and top with all other ingredients.  Place the foil on the BBQ and close lid.  Grill 8-10 minutes.  Serve with crackers or chips for dipping.

 

Rosemary Grilled Chicken

Ingredients: ½ cup mayo, ¼ cup honey mustard, 2 Tablespoons lemon juice, 1 Tablespoon finely chopped fresh rosemary, 2 minced garlic cloves, 6 skinless boneless chicken breasts

 

Combine the first 5 ingredients in a large Ziplock bag.  Cut shallow slashes into chicken and place in bag.  Marinade in fridge 30 minutes to overnight.  Preheat BBQ to medium.  Grill chicken until completely cooked through, approximately 6 minutes per side.

 

Citrus Sherbet Float

Ingredients: lemonade, orange juice, rainbow sherbet

 

Mix equal parts lemonade and OJ into glasses, and top each with one scoop of rainbow sherbet.
