Chia Berry Baked Oatmeal

If you haven’t jumped on the baked oatmeal train yet, this is the recipe to try! It’s so easy, and a one-bowl, deliciously satisfying way to start your family’s day. So far it has been a hit with the little, and that says a lot! Leave this recipe out as a hint for the kids for Mother’s Day! You’ll thank me!

Ingredients

  • 3 cups old fashioned rolled oats
  • 2 tablespoons chia seeds 
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • ⅓ cup maple syrup or honey 
  • 1 ripe banana, mashed (or can sub in ½ cup applesauce if you don’t have a ripe banana)
  • 2 eggs
  • 1 ½ cups milk (I use 2% because that is what we have at home, but any % will do) 
  • ¼ cup melted unsalted butter 
  • 2 teaspoons vanilla 
  • ¼ cup almonds, sliced or chopped + more for topping 
  • 1 ½ cups frozen berries (any kind – fresh works too!)

Directions

  1. Preheat the oven to 375. Spray a 9×9 or 8×8-inch baking dish with cooking oil spray or grease with butter or oil.
  2. Combine all of the ingredients in a bowl and mix.
  3. Transfer to the baking dish and sprinkle with extra frozen berries and sliced almonds, if desired.
  4. Bake for 30-35 minutes or until center is set. 
  5. Let it sit for about 10 minutes before serving.

Special Tip for Mama’s Day – top with a bit of whipped cream, some more fresh berries and a drizzle of maple syrup. Bring baked oatmeal delight to her in bed and tell her that she can go back to sleep after enjoying her scrumptious breakfast in peace. Ha!
