Easy and Delicious Creamy Asparagus Soup

The months are getting cooler and it’s the season for warm lattes, fuzzy sweaters, snuggles by the fire and all the delicious comfort foods. Fall is hands-down my favourite time of year for all those things! This month I wanted to share with you my latest obessession…creamy asparagus soup! Not only is it super simple to make, it’s jam-packed with fibre and an excellent source of folate and vitamins A and C. I have been making this soup every couple weeks since the spring (when asparagus is in season and I could get it locally). Now that it’s not in season, I opt for the large Costco bag of asparagus instead.

  Creamy Asparagus Soup

    Ingredients

  •  3 cloves of garlic, chopped
  • 1 yellow onion, chopped
  •  1 tbsp oil
  •  5 cups asparagus, chopped (or 1 bag of asparagus from Costco)
  •  2 tsp (10 mL) cumin
  •  1 tsp (5 mL) paprika
  •  1 tsp (5 mL) chilli flakes (if you like some heat)
  •  4 cups (1 L) stock (vegetable or chicken)
  •  ¼ cup (60 mL) parmesan cheese
  • 8 servings 

    Instructions

  •  Over med-high heat, sauté onion and garlic in a saucepan with oil, stiring occasionally, about 5 min.
  • Add asparagus to onion and garlic mixture and cook for another 3 min, stiring occasionally.
  • Add cumin, paprika and chilli flakes and stir.
  • Add stock and stir.
  • Reduce heat to medium, cover and let simmer until asparagus is soft (about 15 min).
  •  Remove from heat and blend with an immersion blender.
  • Add parmesan cheese and blend until fully combined.
  • Enjoy!
