Pumpkins aren’t just for carving; they’re a powerhouse of nutrition! Rich in vitamin A, fiber and antioxidants, pumpkins can be a versatile ingredient in your fall recipes. Try making a creamy pumpkin soup or adding pumpkin puree to your pancake or muffin batter for a nutrient boost.
Pumpkin Oatmeal Muffins
- 1 cup pumpkin puree
- 2 eggs
- 1/4 cup maple syrup
- 1/4 cup olive oil
- 1 tsp vanilla extract
- 1 1/2 cups rolled oats
- 1/2 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
Instructions:
- Preheat the oven to 350°F and line a muffin tin with paper liners.
- In a large bowl, mix the pumpkin puree, eggs, maple syrup, olive oil, and vanilla extract until smooth.
- In a separate bowl, whisk together the oats, flour, baking powder, baking soda, cinnamon, nutmeg and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the batter evenly among the muffin cups and bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let cool and enjoy them with your family!
